Sales at his family’s oyster cake stall fell by 60 per cent. So Deitrich “Moe” Mohan did the one thing his mum never wanted: He changed the recipe.

The third-generation hawker created a modern version of the family’s oyster cake — with less oil, custom toppings and aimed at a younger target audience. But his mum, who inherited the recipe from his grandmother, disagreed.

“If your grandmother tasted this, she would scold you,” she told him.

Moe decided to launch his new version at a pop-up, testing whether traditional hawker food can survive in a different form.
