How to make MOQUECA MISTA BAIANA. Brazilian Fish Shrimp Stew. Cooking Moqueca with João Silva.
After leisure holidays in Camamu Bay we sailed back to Salvador de Bahia. We wanted to say Good Bye to this wonderful city we fall in love with. And we wanted to learn how to cook a traditional Brazilian fish stew – MOQUECA MISTA BAIANA. For us it’s a part of exploring countries – to eat good local food and to learn how to cook it.
The taste of Brazil is MOQUECA. Сolorful, delicious and sunny like Brazil and brazilian people.
Moqueca (pronounced “mo-keh-kah”) is a fish stew native to the northern state of Bahia (now you know why we decided to sail our catamarn straight to Salvador?). It’s made with a base of palm oil and coconut milk, combined with fish, lobster, shrimp or other seafood and vegetables. Moqueca is stewed in traditional clay pots along with vegetables and fresh herbs, and it is traditionally served over rice and pirão.
Imagine, how lucky we were, when the marina manager Dominique introduced us to the owner of the famous Cuco Bistro José Iglesias Garcia and the chef João Silva.
