Whole Wheat Pancakes w/ Caramel Recipe + How My Diet Has Changed 👀

♡Recipe:
Pancakes:
1 cup nondairy milk
1 tbsp vinegar or lemon juice
1 cup whole wheat flour (or GF or spelt, etc)
1 tsp baking soda
1 tsp baking powder
2-3 tbsp coconut sugar
pinch of salt
optional: 1 tbsp oil or applesauce
optional: dash of cinnamon

- Whisk together nondairy milk and vinegar. Set aside. Whisk together dry ingredients. Add wet to dry. Add oil or applesauce if using. Spoon into non-stick pan on medium heat and cook 3-5 minutes on first side. When edges are cooked and bubbles have risen to the surface and burst, flip. Cook 1-2 minutes on the other side. Serve.

Coconut Caramel Sauce:
3/4 cup full-fat canned coconut milk
1/2 cup coconut palm sugar (or brown sugar if you want)
1 tsp vanilla
1 tbsp tapioca starch or corn starch
1/4 tsp salt
optional: 2-3 tbsp maple syrup for extra sweetness and slight maple flavour

- Whisk together over medium heat until simmering, then lower heat and stir continuously for 3-4 minutes until darker and thickened. Let cool slightly.
