My Original Recipe
Enchilada Lettuce Cups

Thank 8 Chicken breast (you can sub for help thighs or all thighs. Just keep size in mind when replacing)
12 oz enchilada sauce
1 cup of roasted tamotilla salsa
1 cup of your favorite salsa (chunky works best here)
1 tbs salt
1tsp of pepper
2 tsp of cumin
1tbs garlic powder
2 tbs Tajin

Lettuce cups or Tortillas
Cheese
Cilantro
Mix half greek yogurt and half sour cream for a healthier topping alternative
Cucumber
Lime
