How to make Kuih Bingka Ubi - Baked Tapioca Cake (烤的木薯蛋糕)

Ingredients
1 kg grated tapioca (Soaked in water for 3-4 hour/overnight)
200 g sugar
⅙ tsp salt
2 eggs
50 ml tbsp pandang extracts
475 ml coconut milk
banana leaf or parchment paper

Grease & line 23 x 20 x 5 cm square cake tin with banana leaf or parchment paper. Preheat oven to 170°C.
Grate the soaked tapioca in a mixer finely.

Beat eggs, sugar, salt, pandang extract, coconut milk and tapioca till evenly mixed.
Pour batter into cake tin, even up the mixture with a spatcular. Bake till top is golden brown for 1 & half hour , edges are crusty and slightly caramelized. Cover edges with foil during last 30 minutes.

Remove cake from oven. Cool cake completely for 3-4 hour before cutting.Unmould and removed babana leave from , cut the cake with a greased knife for smooth finish. Serve at room temperature. Store up to 3 days in fridge or longer time in the freezer. Micro wave or heat the cake in a warm oven before serving.
