Making Korean JAPCHAE GLASS NOODLES with Grandma! (Halmoni-approved 잡채)

Japchae (잡채), aka Korean “glass noodles” are one of my favorite things to eat cold in the warmer months. Lucky for me, my grandma makes it to perfection. Here’s how to WHIP Japchae like a Halmoni!

P.S. I mention it in the video, but this is less of a super measured recipe video and more of a fun, (hopefully) entertaining, cook-along video to introduce you all to my awesome G-ma. “Japchae” (잡채) Ingredients:

8 ounces beef, cut into batons
5 large dried Shitake shrooms, soaked for 30 mins then sliced thin
4 garlic cloves, minced, divided
2 Tbsp Sugar, divided
3 Tbsp Light Soy, divided
3 Tbsp Toasted Sesame Oil, divided
2 Whole eggs, whisked
1 medium bunch spinach, blanched and chopped
6 oz Sweet Potato Starch Noodles
3 green onions, cut crosswise into 2 inch long pieces
1/2 Onion, sliced thinly
1 medium Carrot, matchsticks
1 small Red bell pepper, cut into thin strips
Black Pepper + Kosher Salt TT
Neutral Oil
