🍽️ Nalli Nihari Recipe (with 500g meat) – English Instructions:

🛒 Ingredients:
• 500g meat with bone marrow (nalli)
• 1 medium onion (for birista)
• 1/2 cup yogurt (curd)
• 1 tbsp ginger garlic paste
• 1/2 tsp turmeric powder
• 1 tsp red chili powder
• Salt to taste
• 1 tbsp Nihari Masala (Shaan brand)
• 1 tsp coriander powder
• Water as required
• 1 tsp cornflour (mix with water)
• Sliced ginger and green chilies for garnish

👩‍🍳 Procedure:
1. Make Birista:

• Thinly slice 1 onion and fry until golden brown.
• Let it cool and grind into a paste with 1/2 cup curd.

2. Cook Meat:

• Heat oil and add the meat (gosh & nalli).
• Add ginger garlic paste, turmeric, red chili powder, and salt.
• Sauté for 3–4 minutes.
• Add enough water, pressure cook for 1 whistle on high flame, then cook on low flame for 10–15 minutes till meat is tender.
3. Add Birista Paste:

• Transfer cooked meat to a pan.
• Add the birista-curd paste and sauté well.
4. Add Masalas:

• Add Nihari Masala (1 tbsp), coriander powder (1 tsp).
• Sauté everything together for 4–5 minutes.
5. Adjust Gravy:

• Add water for desired consistency.
• Mix 1 tsp cornflour in water and add while stirring continuously.
• Cover and cook for 7–8 minutes on low flame.
6. Final Touch:

• Garnish with sliced ginger and green chilies.
• Serve hot with tandoori roti or chapati.
