🍽️Sabatini’s-Inspired Arancini (With Mushroom Risotto Center) Recipe
🧾 Ingredients
For the Arancini
• 3 cups cold mushroom risotto (Pat’s recipe works perfectly 👍)
• 2 large eggs (beaten)
• ½ cup grated Parmesan cheese
• 2 cups Italian breadcrumbs (divided)
• 1–2 cups mozzarella or other cheese (cut into small cubes)
• Salt & pepper to taste
For Frying
• Vegetable or canola oil (for deep frying)
🍅 Marinara Sauce (for dipping)
• 2 cups marinara sauce (homemade or store-bought)

👩‍🍳 Step-by-Step Instructions
1. Prepare the Risotto Mixture
Chill the risotto first (very important!)
Make sure your mushroom risotto is fully chilled for at least 2–3 hours or overnight. This helps the arancini hold their shape.
In a large bowl, mix together:
• Chilled mushroom risotto
• Beaten eggs
• ½ cup breadcrumbs
• Parmesan cheese
Mix until fully combined.

2. Form the Arancini
• Scoop about 2–3 tablespoons of risotto into your hand
• Flatten slightly, then:
• Add a cube of cheese in the center 🧀
• Roll into a tight ball (about golf ball size)

3. Bread the Arancini
• Place the remaining breadcrumbs (about 1½ cups) in a bowl
• Roll each arancini ball in the breadcrumbs until fully coated
👉 Place on a tray and chill for 30 minutes
(This helps them stay together while frying)

4. Fry to Golden Perfection
• Heat oil to 350°F (175°C)
• Fry 3–4 at a time (don’t overcrowd)
• Cook for 3–4 minutes until golden brown

5. Drain & Keep Warm
• Transfer to paper towels or a wire rack
• Lightly sprinkle with salt while hot
• Keep warm in a 200°F oven until ready to servem
