HOW TO MAKE TOM YUM SOUP | SUPER EASY HOMEMADE WINTER VEGAN RECIPE
LAY HO MA everyone! This is one of my all time favourite soups - its salty, sweet, sour, spicy, and just an explosion of flavour. But the best part is that its incredibly easy to make. Join me in this episode and learn how to make tom yum soup at home. Let's begin
Ingredients:
2 sticks lemongrass
1 medium piece galangal
6 kafir lime leaves
1 red thai chili
3L water
2 sticks green onion
1 red bell pepper
1 green bell pepper
1 generous handful of cremini mushrooms
1/2 red onion
1 tomato
1 can baby corn
3 tbsp red chili paste
1 1/2 tbsp pink salt
2 tbsp cane sugar
2 tbsp tamarind paste (https://youtu.be/l8IMbND2-6Q)
1 lime
1/2 cup canned coconut milk
Directions:
1. Peel the outer layer of the lemongrass and bash the end of the lemongrass with the butt of a knife
2. Slice the lemongrass and set aside
3. Roughly chop the galangal and kafir leaves
4. Fill a stock pot with 3L of water. Add the lemongrass, galangal, lime leaves, chili, and the bottom half of the green onions
5. Cover the pot and bring to a boil. Cook for 25-30min
6. Remove the solid ingredients
7. Add roughly chopped red, green pepper, red onion, and tomato along with the corn and mushrooms
8. Add the salt, cane sugar, chili paste, tamarind paste, lime juice, and coconut milk
9. Stir and bring to a boil
10. Top with freshly chopped green onions
