How to Make Potato, Onion & Egg Frittata

Recipe: How to Make Potato and Egg Frittata

8 eggs
1 small onion finely chopped
2 medium sized potatoes
1 cup grated Pecorino Romano
Salt and pepper to taste
Oil for pan

Preheat the oven to 350°. Peel and dice the potatoes. Finely chop the onion. Heat the oil in a 10 or 12 inch skillet. When pan is heated put in the potatoes and cook until slightly brown. Add in onion and saute with the potatoes.

In the meanwhile beat the eggs, add grated cheese, salt and pepper to taste. Mix well. When the potatoes and onions are done add the egg mixture and cook over medium heat until eggs are done on the bottom but still a little loose on the top.

Place pan in preheated oven and bake for about 5-10 minutes checking on it. When the eggs are cooked, place under broiler watching it for two minutes until the top is browned.
