Baked Salmon with Rice Recipe🐟

Ingredients:
4 salmon fillets

1 large onion (or 2 medium), diced

2 garlic cloves, minced

2 cups cooked white rice

Juice of ½ lemon

1 tbsp honey

1 tbsp chopped fresh cilantro

Spice Blend: ½ tsp crushed red pepper, 1 tsp black pepper, 1 tsp paprika, salt (to taste)

Instructions:
Preheat Oven: 400°F (200°C).

Prep Vegetables:

In a baking dish, toss diced onion and garlic with half the spice blend and honey.

Marinate Salmon:

Squeeze lemon juice over salmon fillets, then coat with the remaining spice blend.

First Bake:

Place salmon on top of the onion mixture. Bake for 15 minutes.

Add Rice:

Remove salmon from the dish. Stir cooked rice and cilantro into the onion mixture.

Final Bake:

Return salmon on top of the rice. Bake for 5-8 minutes until salmon is fully cooked.

Serve: Garnish with extra cilantro and lemon wedges.
