Blended oats with baked nectarines 🍑

Serves 4-5, (aka perfect breakfast meal prep for the week) 😍

200g rolled oats
1 tsp vanilla extract
15g chia seeds
15g pumpkin seeds/ other seeds
440ml oat milk
2 tablespoons agave syrup/ sweetener of choice

4 nectarines sliced in half
A sprinkle of sugar/ sweetener
A little water

Method

Bake your nectarines in an oven dish for 25-30 mins at 170c until soft & slightly browned. Let them cool

Meanwhile, mix together all of your other ingredients. Add the nectarines to the oat mix & blitz with a hand blender or in your smoothie blender until smooth. Serve with more nectarines if you wish, maybe some soy yoghurt & an extra drizzle of sweetener.
