- any mushrooms (I have chanterelle mushrooms)

I have the mushrooms boiled in advance. Finely chop the mushrooms. Roast in a pan for 7-10 minutes. In a bowl mix the mushrooms, seasonings, mayonnaise and mix thoroughly. Batter the chicken fillet (this is a must). Then put the stuffing on the filet and wrap it in a roll. Wrap bacon on top. Preheat the oven to 200 degrees, top and bottom heat and bake for 30-45 minutes!
