**Grandma's Eggnog Pie**

**Ingredients**
.25-ounce package of unflavored gelatin
1/4 cup of cold water
1 cup of cold milk
1/2 cup of white sugar
2 eggs
1/4 cup of rum extract
1/2 cup of whipping cream
2 tablespoons of white sugar
9-inch pie shell, baked
1 teaspoon of ground nutmeg
**Preparations**
1. Preheat the oven to 375°F for about 5 minutes, and place the 9-inch pie shell on a sheet pan for stability. Prick the bottom and sides of the shell with a fork to prevent it from bubbling up.
2. Bake for 10-15 minutes until golden brown. Remove, place on a wire rack, and cool completely.
**Instructions**
1. In a small bowl, combine a 25-ounce package of unflavored gelatin and 1/4 cup of cold water; set aside to soften.
2. Combine 1 cup of cold milk and 1/2 cup of sugar in a saucepan. On low heat, cook for 3 minutes or until milk begins to boil.
4. Add 2 eggs, whisking constantly. Cook custard until it thickens slightly, about 2-3 minutes. Stir in the softened gelatin and mix until it has melted. Stir in rum.
5. Let filling cool to room temperature.
6. In a medium bowl, whip cream until soft peaks form; beat in 2 tablespoons of sugar.
7. Fold it into the eggnog mixture. Pour filling into a prebaked pie crust and refrigerate overnight.
8. Garnish with a teaspoon of nutmeg.
**Yield**
