Sous Vide Experiment Brisket Flat 24 hours then smoked, is it better?

First time sous vide a brisket flat then smoking to see if the results are better than just simply smoking a brisket. The results were certainly intriguing and was able to push the anova precision cooker to it's limits. I will be using this cooker over the next month providing my feedback to include the Pros & Cons of using a sous vide cooker with a variety of proteins to see how it stacks up compared to normal grilling.
