Watermelon avo mint salad recipe- Combine 3 cups cubed watermelon, 1 avocado diced, 1/4 cup chopped mint leaves, the juice of 1 lime or other citrus, & a dash of salt & pepper! I add a splash of balsamic vinegar sometimes too.
