Amish Style Muenster Cheese From Raw Cow's Milk

Making cheese from fresh, raw cow's milk is the fun project for today. The recipe came from an Amish cookbook. Here's how I did it.
Ingredients:
Let one gallon milk ripen and curdle naturally. (should take 2-3 days)
Cut the curd and heat slowly to the point of being too hot for your hand.
Drain whey from curds for 12 hours.
Crumble curds and add 1tsp baking soda and 1/4 cup butter. Let sit for 2 hours.
Place curds in double boiler. Mix in 1/2 cup sour cream. Melt curds, stirring occasionally. Add another 1/2 cup sour cream. Pour into butter mold and cool.
