Pan-Seared Filet Mignon Steak, tender, delicate and just mouth-watering.

Ingredients:
2-170 g (6 oz) filet Mignon
kosher salt
black pepper
2 tbsp avocado oil (or clarified butter) for frying

For the Sauce:
2 tbsp butter
1 small yellow onion, chopped
115 g (or 4 oz) button mushrooms, sliced
1/2 cup dry red wine
1/4 cup cooking cream
2 cloves garlic, minced
1/2 tsp paprika
2 tsp chopped parsley
2 tbsp water + 1 tsp cornstarch for slurry
(optional)

For Garnish:
Fried 4 stems scallions
Fried potatoes (boiled 2 potatoes for 15-20 minutes
with skin until soft but firm. Let cool in the counter
until ready to be sliced to your desired thickness.
Fry until both sides are golden brown)
Sprinkle some parsley

1. Remove steak from refrigerator 30 minutes prior to cooking to be at room temperature. When ready, season all sides of generously with salt and pepper or your favorite seasoning. Leave the steak while preparing the vegetables for the sauce.

2. Chop the onions and slice the mushrooms. Mince the garlic and chop some parsley.

3. In a skillet, over medium heat, put 2 tbsp butter until melted. Sauté onions for about 3 minutes then add the mushrooms. Sprinkle some salt. Continue cooking until mushrooms and onions are tender, about 10 minutes. Transfer to a small bowl and set aside.

4. In the same skillet, add 2 tbsp of avocado oil or butter if you prefer. Turn heat up to medium-high. Sear the filets for 4-5 minutes on each side until you have a thin caramelization. Try to sear all other sides for at least 1-2 minutes. Turn heat to low, cover the pan, and continue cooking to your desired internal temperature. I aimed for a “medium” temperature of 57-63°C (135–145°F). HeSet filets on a cutting board to rest for at least 10 minutes.

5. Turn the heat to medium-low using the same pan. Pour wine into the skillet, stir and scrape up any brown bits in the bottom of the pan —- (curdling occurred and according to my research, the key is in cooking and reducing the wine before you introduce the cream or milk, whisk gently. But the taste was really good)

6. Add paprika, parsley, and garlic, mix together. Bring to a slight boil. Add the mushrooms and onions mixture. Stir, and turn the heat to low. Allow to simmer until it thickens, or if you prefer, add a slurry midway, stirring constantly and let simmer for another minute.

7. Slice the steak and plate them how you like it and serve with fried scallions and potatoes. Sprinkle with some parsley. Bon appétit!
