Khmer Food ឆាគ្រឿងខ្យងយកាពិ Stir Fried Lemongrass Escargot ( Water Snails)

Today’s recipe is How to Cook Water Snails or Escargot and Shrimp Paste. The snails are removed from the shells and cook with lemongrass and shrimp paste. Some of the vegetables included Holy basil, Kermit Eggplants, and jalapenos. This dish is delicious with steam rice. Water snails are a delegacy in Cambodia. Ingredients គ្រឿងផ្សំ
1 pound water snails សាច់ខ្យងកន្លះគីឡូ
½ cup lemongrass paste គ្រៀងសន្លឹកគ្រីបុក់កន្លះកែវ
4 Tablespoons oil ព្រេងឆា៤ស្លាបព្រាបាយ
1 teaspoon shrimp paste កាពិ១ស្លាបព្រាកាហ្វេ
2 Tablespoons fish sauce ទឹកត្រី២ស្លាបព្រាបាយ
1 teaspoon sugar ស្ករ១ស្លាបព្រាកាហ្វេ
1 teaspoon chicken powder ម៉្សៅសូប់មាន់១ស្លាបព្រាកាហ្វេ
2 cups Kermit Eggplants ទ្រាប់ស្រួយ២កែវ
½ cup jalapenos ម្ទេសហាឡាពីញ៉ូកន្លះកែវ
2 Tablespoons lemon juice ទឹកក្រូចឆ្មា២ស្លាបព្រាបាយ
½ cup Holly Basil ម្រះព្រៅកន្លះកែវ
