In this video, I attempt to roast Maui Mokka coffee at home with our Hottop Coffee Roaster for the first time. As you may know, Maui Mokka is a unique coffee variety from Ka’anapali, Hawaii. This coffee in particular is extra tricky to roast because it is a natural process coffee. Natural process coffees are known for having a sweeter profile and fuller body with less acidity than washed process coffees. Because this Maui Mokka is a natural process coffee, there is a greater chance of scorching, tipping, or flat-out burning this coffee because it contains more sugars and lipids. In addition, these beans are very small in size, so they take on heat rapidly making it difficult to manage ROR. I've learned the best way to successfully roast this coffee is to charge at a 25% - 35% reduction of heat, then slowly allowing the coffee to caramelize by extending the Maillard phase and also first crack. Which should enhance the aromas, sweetness, and body of the coffee.

I'd like to call this first attempt a success just because I didn't burn the batch. LOL
Next time I'll roast a smaller batch, charge at 200 degrees Fahrenheit and extend the Maillard phase as well a first crack more, for a target roast time of 13 minutes.

In the end, this sample tasted good, but there's definitely room for improvement.
