Make Your Own Pot Roast - Better Than Fast Food

A family recipe for the best pot roast you have ever tasted. Melt in your mouth dinner for about $2 a serving. My wonderful mother in law inspired this recipe. She has a secret ingredient that I can't use because I'm allergic, so I re-created the idea of it, with a similar flavor profile. The method of cooking low and slow in a broth has been passed down for generations. I am loving my new Dutch Oven (thanks Mom and Dad), but you could certainly do this in a crock pot.

Updated to Add:- I turned this into shredded beef tacos for lunch the next day. So the cost per serving is a little bit over a $1 per serving when factoring in 6-7 servings for dinner, and 4 servings for lunch. I did buy the Chuck Roast on sale at Sprouts.. we don't have this very often. Home cooking is where it's at, peeps. :)

Ingredients -

1 white onion, roughly chopped - .25
1 8 ounce container of baby mushrooms-$1.50
1 box of beef stock (can sub water, broth, or bouillon) - about 4 cups-$1.99
2 pieces of chuck roast, about 2 pounds each - $11.00 (on sale)
3-4 pounds of potatoes for mashing - $2.00

Can also be shredded for tacos, enchiladas, bbq beef sandwiches. I'm kicking myself for not buying more to freeze for later.
