Growing up in a Jamaican household, I've learned the secrets of traditional island cooking from my family and now, as an integrative nutrition diabetes lifestyle coach, I'm excited to bring these flavors to your kitchen!

In today's video, I'll be showing you how to make a classic Jamaican Jerk Marinade from scratch. This marinade is packed with bold flavors and spices that will elevate your meat, poultry, or vegetables to new heights. Let's dive into the ingredients and their significance:

Allspice (Pimento): The heart and soul of jerk seasoning, allspice adds a warm, sweet-spicy flavor.
Scotch Bonnet Peppers: For that fiery kick, these peppers also provide fruity undertones. You can also sub habaneros. Leave the seeds in for more heat, and take them out for less.
Thyme: A staple in Jamaican cooking, fresh thyme imparts earthy, minty notes.
Green Onions (Scallions): Adding a mild, sweet flavor and crunchy texture.
Garlic: For depth and richness in the marinade.
White Onion: A helpful aromatic.
Ginger: Fresh ginger brings a zesty, warming touch.
Brown Sugar: To balance the heat and enhance the flavors.
Browning: Introducing a savory, umami element. Some sub a little bit of soy sauce.
Lime Juice: Fresh lime juice brightens and adds acidity.
Spices: A blend of nutmeg, and cloves for warmth and complexity.

Now let's get started on making this delicious marinade!

Step 1: Prepare your ingredients by finely chopping the green onions, garlic, and ginger, and deseeding the Scotch Bonnet peppers (use gloves to avoid irritation).

Step 2: In a blender or food processor, combine all the ingredients and blend until smooth. Adjust the heat level to your preference by adding more or less Scotch Bonnet peppers.

Step 3: Marinate your choice of meat, poultry, or vegetables for at least 4 hours, or ideally overnight, in the refrigerator.

Step 4: When ready to cook, use indirect heat (grilling or roasting) to avoid burning the marinade and ensure even cooking.
