Sticky Toffee Pudding with a fall twist 🍎🍁 | Day 6/7 Fall Baking
5/7: Sticky Apple Pudding 🍎Stewed Apple Purée:🥣 2 cups cubed apples (about 2 medium apples)🍏 2 tablespoons (30g) brown sugar🍎 ¼ cup (60ml) apple cider
🍹 2 tbsp bourbon (optional)🧂 Pinch of salt🌿 ½ teaspoon cinnamon
Cake Batter:🧈 ½ cup (115g) browned butter🥚 2 large eggs🌱 1 teaspoon vanilla extract🌾 1⅓ cups (160g) all-purpose flour🥄 1½ teaspoons baking powder🥄 ½ teaspoon baking soda🪵 1 teaspoon cinnamon
🌰 ¼ teaspoon nutmeg🥧 ¼ teaspoon allspice🥛 ½ cup (120ml) whole milk🍏 Warm stewed apple purée (from above)
Toffee:🍬 ¾ cup (150g) brown sugar🥛 ½ cup (120ml) heavy cream🧈 4 tablespoons (60g) unsalted butter🌱 1 teaspoon vanilla
Steps:1️⃣ In a pot, boil brown sugar, apple cider, bourbon, salt, and cinnamon, then stir in butter. Add cubed apples and simmer until soft. Blend into a purée.2️⃣ Preheat oven to 350°F, grease a 9x9” pan.3️⃣ Whisk browned butter with brown sugar, then mix in eggs and vanilla. Mix in milk. Combine wet ingredients into dry and stir in apple purée.4️⃣ Pour into the pan and bake for 28-35 minutes until springy and a toothpick comes out clean.5️⃣ Make the Toffee Soak: In a saucepan, combine brown sugar, heavy cream, and butter. Bring to a boil, then simmer for a couple of minutes until smooth. Stir in vanilla and keep warm.6️⃣ Once the cake is out of the oven, poke holes all over with a fork, and pour half of the warm toffee over the top. Let it absorb for 10-15 minutes.
7️⃣ Enjoy it warm with extra toffee and a scoop of ice cream.
