Blueberry Pancakes From Scratch | Easy and Delicious! 🫐 #shorts

Makes 24 4-inch pancakes

3 cups flour
6 tbsp sugar
1 and 1/2 tbsp baking powder
3/4 tsp salt
2 and 3/4 cups milk
3 eggs
6 tbsp butter, melted and cooled
2-4 tbsp butter for cooking
1 cup blueberries

Add dry ingredients and whisk to combine. Whisk eggs in a separate bowl and then add to mixture. Add milk and melted butter and mix to combine but do not over mix. Set batter aside for about 20 minutes. It will thicken as it rests. Heat a large pan or griddle on low and add butter to generously coat the pan. Pour 1/4 cup batter in the pan to make 4 inch pancakes. Add 5 or so blueberries to each one and then drizzle a tiny bit of batter on top of the blueberries to seal them in. When the pancakes become bubbly, flip and let them finish cooking for only a minute. Then remove and keep warm while you make the rest. (If you need more heat in the pan, adjust to med-low.) Serve pancakes warm with a drizzle of maple syrup and enjoy! And don’t throw away leftovers! They can be used in my baked French toast. See recipe video.
