VAN LIFE CHEF makes MEAT FREE PO BOY SANDWICH | secret ingredient for vegans | Ride and Eat

Today we are making you a meat-free “fish” po boy with an asian spin. This unique, southern staple definitely proved worthy of a decadent vegan meal. Bamboo shoots as faux fish you say? You’ll have to tune in to try it out!

This week’s #rideandeat video is an ode to southern food. Being back in our ol’ hometown, Charleston, where our journey began, made me want to share this classic with a vegan twist. Now most of you may know what a po’ boy is but by now you know I don’t do basic. I like to be unique so I’m putting an asian spin on it! Behold the asian fried “fish” po boy. To get extra weird, I’m using bamboo shoots as my mock “fish". I have to say; with the marinade and the accoutrements, this was a banging Sammy. However, if you don’t think you’re adventurous enough for bamboo, try hearts of palm, banana blossoms or even cauliflower in its place! Either way, it’s a plant based po boy for the win!
