This video explain how to make butter scotch ice cream.
INGREDIENTS
FOR TOPPING -Nuts - 20 no.s
Sugar - 3 tbsp
FOR BUTTER SCOTCH SAUCE
Sugar - 1/4 cup
Butter - 25 gm
Hot milk - 1/4 cup
FOR ICE-CREAM
Whipping cream - 250 ml
Fresh cream - 200 gm
Condensed milk -- 1/2 tin
Vanilla or butter scotch essence - 1/4 tsp
Method
Heat the sugar in a pan , no need to stir at first , the sugar will caramalize its own.When the sugar almost caramalized ,stir and add the nuts , mix well ,pour to a aluminium foil , wait for some minutes ,then crush it and keep aside for topping the ice cream.
To prepare butter scotch sauce , caramalise the sugar to light golden color ,add in the butter , stir well then slowly pour the hot milk , mix well and make a thick sauce,allow to cool down.
Beat the whipping cream , fresh cream , condensed milk and vanilla essence for 4-5 minutes or until the stiff peak forms.
add in the prepared butter scotch sauce and beat again to combine well
cover the bowl with the plastic wrap and keep in the freezer for 1 hour
after 1 hour take out the bowl from the freezer and beat again for 3-4 minute and keep in the freezer for 2 hours
After that scoop out the ice cream in to the serving bowls and sprinkle the crushed caramalised nuts on top of the ice- cream
