LEARN HOW TO MAKE THIS CHINESE DIM SUM FAVOURITE - LO BAK GOU (TURNIP CAKES)!
LAY HO LAY HO indeed today! Talk about a childhood favourite, this popular dim sum dish will surely turn your home kitchen into a fancy restaurant. Join me in this episode and learn how to make an easy Chinese style turnip cake recipe (lo bak gou). Let's begin
Ingredients:
1lb shredded lo bak (or Japanese daikon)
7-8 dried shiitakes (rehydrated)
3 sticks green onion
1 cup rice flour
1 tsp cane sugar
pinch of salt
2 cups water
3 tbsp avocado oil
1 tbsp soy sauce
1 tsp black vinegar
1 tbsp chili oil (https://youtu.be/IkBWsfsEVkM)
1 tsp white sesame seeds
Directions:
1. Peel the lo bak and shred into a bowl
2. Squeeze out the liquid from the rehydrated shiitakes. Then, carefully remove the stalks to discard. Chop the shiitakes into small cubes
3. Finely chop the green onions and set aside a little bit for garnish
4. In a large mixing bowl, whisk together the rice flour, cane sugar, salt, and 2 cups of water
5. Grease a 10 inch baking dish with a drizzle of avocado oil. Preheat the oven to 350F
6. Heat up a nonstick pan to medium heat. Add 2 tbsp of avocado oil followed by the shiitake mushrooms. Sauté for 2-3min
7. Add the green onions and sauté for about 1min. Add the shredded lo bak and sauté until the lo bak is fully cooked and tender, around 7-8min
8. Give the batter a stir and pour into the pan. Stir and cook for about 2-3min. The batter will become quite thick
9. Transfer the mixture onto the greased baking dish. Use a spatula to flatten the mixture using the dish as a mould. Then, cover the pan and bake for 25min
10. In the meantime, make the sauce by combining together the soy sauce, black vinegar, and chili oil
11. Allow the turnip cake to cool uncovered for about 5-8min. Then, use a spatula to carefully release it from the baking dish. Gently cut the turnip cake into 6 squares
12. Heat up a nonstick pan to medium heat. Add 1 tbsp avocado oil followed by the turnip cakes and sear for about 3-4min
13. Carefully flip the turnip cakes and sear for another 3-4min. Plate the cakes, garnish with green onions, white sesame seeds, and pour over the sauce to serve
