You can’t tell in the video, but behind the camera I was about to cry because they all turned out like little blobs.🥲
Proofing the dough in such a small plate is not recommended at all. Just assume that the dough will at least double in size with bread recipes, so keep that in mind if you’re making these.
For 4 salt bread pieces:
Ingredients:
-Instant yeast — 2g
-Water (warm) — 97.5 g
-Sugar — 6 g
-Bread flour or all-purpose flour — 150g
-Salt — 3 g
-Unsalted butter (room temp, for dough) — 7.5 g
-Butter (for filling) — 4 pieces, 7.5g each
-Salt flakes — as needed
Instructions:
1. Mix warm water, yeast, sugar and mix until the sugar is dissolved.
2. Add the flour and salt to the yeast mixture and knead until combined.
3. Add the unsalted butter and knead until the dough becomes smooth and elastic. Do the window pane test, and if it doesn’t rip, it’s ready to be proofed.
4. Proof for 45 minutes or until it doubles in size.
5. While waiting for the dough to proof, cut the butter pieces that will be rolled into the bread.
6. Separate the proofed dough into 4 pieces and roll them up.
7. Proof the rolled dough for 20 minutes.
8. Shape each dough into a long triangle, add the small piece of butter to the tip, and start rolling. Make sure to not stretch the dough too thin.
9. Proof the shaped dough for 45 minutes
10. Preheat the oven to 200C (392F) and add a bowl of water in the oven so it creates a steamy environment. This allows the bread to have the perfect golden brown colour on the top.
11. Spray the dough with water and add salt on top.
12. Bake them for 12-14 minutes.
13. Brush the top with butter for the shiny look, and enjoy!
