RECIPES

*Chia Pudding*
- 1/4 cup chia seeds
- 1 cup plant milk
- Optional: dash of cinnamon, cardamom, vanilla

Directions:
- Combine all ingredients in a glass jar (with lid). Store overnight in fridge.
- Serve with favorite toppings. I love fresh and/or frozen berries, pumpkin & sunflower seeds, walnuts, almond butter and almond milk. Can also have it with granola and plant based yogurt!

*Tuna Salad*
Ingredients usual vary, but I like:
- tuna (organic / wild caught if possible)
- diced red onion
- cucumbers
- bell pepper (red / yellow / green)
- cherry tomatoes
- pickles
- vegan mayo
- lemon juice
- pumpkin seeds
- salt & pepper to taste

*Thai Curry*
- 1 onion, diced
- 3 cloves garlic, minced
- Ginger, grated (about 1 tbsp)
- 1 can coconut milk
- 1 jar veggie broth
- 2 tbsp thai curry paste
- 2 tbsp tamari sauce

Any veggies you like, today I used:
- Cauliflower (about 1/2 head)
- 1 zucchini
- 1 carrot
- Red, yellow, green bell pepper (about half of each)
- Handful of spinach / kale

Can also use:
- Mushrooms
- Sweet potato
- Eggplant
- Broccoli…

To garnish:
- Freshly chopped cilantro
- Lime juice
- Salt & pepper to taste

Directions:
1. Combine onion, garlic and ginger in a pan with some coconut oil, fry for a few minutes until onions are translucent
2. Add in sliced veggies, veggie broth, coconut milk, thai curry paste and tamari sauce
3. Allow veggies to simmer for about 15/20 minutes, until fork tender
4. Serve alongside rice / quinoa / spinach
5. Garnish with freshly chopped cilantro, lime juice, salt / pepper to taste and enjoy! :)
