APPLE BREAKFAST QUINOA RECIPE BY @Jessica Spiers
Apple Cinnamon Morning Quinoa
INGREDIENTS
1 cup dry quinoa
2 cups water
½ teaspoon sea salt
1 apple core removed and chopped
To add after it’s cooked:
4 tablespoons coconut oil
2 teaspoons cinnamon
2 teaspoons chia seeds
1 handful raisins optional
sprinkle of slivered almonds optional
ASSEMBLE
Add 1 cup dry quinoa to a small saucepan with 2 cups water, sea salt, and chopped apple. Cover and bring to a boil. Once boiling, turn off the heat, and let sit covered for 10-15 minutes until the quinoa is fluffy. Stir in coconut oil, cinnamon, chia seeds, raisins, and almonds, and any other toppings of your choice, and serve hot.

APPLE BARS BY @Jessica Spiers
INGREDIENTS
4 medium apples peeled and cubed
2 teaspoons cinnamon
1 small lemon juiced
1 cup gluten free flour plus extra 2 tbsp
1 tsp baking powder
1 pinch sea salt
1 sprinkle nutmeg
10 tbsp grass-fed butter melted
1 cup coconut sugar
2 eggs
1 tsp pure vanilla extract
ASSEMBLE
Preheat the oven to 325°F and grease a square baking dish or line one with parchment paper. Place the diced apples in a large bowl, and toss with 1 teaspoon of the cinnamon and the lemon juice, and set aside.
In a separate medium bowl, add flour, baking powder, salt, cinnamon and nutmeg, and mix to combine well, then set aside. In another separate large bowl add the sugar, eggs and vanilla, mixing or beating to combine well after each addition. Add the dry ingredients to the wet ones and mix well to combine.
Scrape about two-thirds of the batter into the bowl of apples, and mix to coat all of the apples in the batter. It will be very chunky. Scrape the remaining one-third of the cake batter into the prepared cake pan and spread into an even layer with a spatula. Scrape the chunky apple-packed cake batter on top of the first layer and spread out evenly.
Cover the pan tightly with foil, and place in the center of the preheated oven. Bake for 20 minutes. Remove the foil, and bake for another 20-25 minutes, or until the center is set. Remove from the oven and allow bars to cool in the pan for at least 10-15 minutes before slicing.

Chicken Caesar Pasta Salad by @Jessica Spiers
INGREDIENTS
1/2 cup avocado mayo, diary-free
2 teaspoons olive oil
1 teaspoon apple cider vinegar
1 teaspoon dijon mustard
1 teaspoon lemon juice, divided
1/2 teaspoon anchovy paste
1 clove garlic, crushed
Pinch of fine sea salt
Pinch of freshly ground black pepper
4 pieces of turkey bacon, cooked
1 lb. boneless skinless chicken breast
1 head romaine lettuce, cleaned and roughly chopped
1 16-ounce package gluten-free pasta
1 cup cherry tomatoes, halved
1 lemon
Salt and pepper, to taste
ASSEMBLE
Make the dressing: In a high-speed blender combine mayo, olive oil, vinegar, dijon, lemon juice, anchovy paste, garlic and big pinch salt and pepper. Pulse once or twice just until blended. Taste and adjust seasoning and set aside.
Season chicken with salt and pepper and grill for 8-10 minutes on each side until no pink remains. Cut into cubes and set aside.
Make pasta as instructed on package. Rinse with cool water and drain and place into a large bowl.
Assemble: To the large bowl, add pasta, bacon, tomatoes, lettuce, and chicken. Pour over dressing and mix to combine. Season to taste with salt, pepper and a squeeze of fresh lemon juice. Serve warm or room temperature.
