Soviet Brands Part Four: Doctor’s Sausage

Докторская колбаса, or Doctor’s Sausage, was a brand created by the Soviets in 1936 as a nutritionally rich solution to widespread malnutrition across the Union — and it became the main ingredient in soviet babushka’s solyanka.

As you can guess, the name was chosen to suggest that doctors approved of its health benefits while keeping it affordable. And in fact, the ingredients were quite clean and healthy: a mix of beef, pork, milk, and whole eggs, lightly spiced, with no preservatives other than salt. Even though this meant a shorter shelf life, it wasn’t a problem since supply was always far behind demand, just like everything else in the Soviet Union.

After 1991, many companies tried to claim the rights to the Doctor’s Sausage brand, but none succeeded. Today, dairy and meat producers across post-Soviet countries make their own versions of the recipe, which makes Doctor’s Sausage is more of a type of sausage than a single brand.
