Angel Food Cake
Ingredients:

1¾ cups brown sugar
1 cup cake flour
1 tsp kosher salt
1 tsp orange zest

1½ cups egg whites (10-12 large eggs)
1 tsp fresh lemon juice
1 tsp vanilla extract
1/2 of a vanilla bean , scraped
2 TBSP fresh orange juice

9-10 inch bundt or similar pan

Method:
Preheat oven to 350 degrees and DO NOT grease the pan or the cake will slide off and not rise properly.
In one bowl, put your flour and sift 3/4 cup of your brown sugar and add your salt and orange zest and put aside.
In a super clean bowl, place your egg whites and add the lemon juice. You can't HAVE ANY egg yolk or fats in the bowl or you will never get to stiff peaks with your whites. Use a granny mixer to bring the whites to stiff peaks and the lemon helps the process and then sift in the other 1 cup of brown sugar, vanilla bean, orange juice and lightly bring the mix together without killing the meringue. Give the mix another quick granny mix to bring back to stiff peaks.
Add the meringue to the flour/sugar mixture in parts and lightly toss together. DO NOT heavily mix but fold into the flour until it's all mixed and then place into UNGREASED pan and place in preheated oven and smoothing out the top and making sure the batter is not all over the sides.
Bake for about 30-40 minutes based on your oven, just keep an eye on it and turn it after the first 15 minutes for even cooking. Remove from oven and immediately place on your wine bottle to keep the cake from collapsing.
Once cooled, carefully remove from the pan and enjoy.
