"Simple & Delicious: Pulliyodarai with Crispy Potato Fry"@Kavithaprkitchen

Ingredients for Pulliyodarai (Tamarind Rice):

For the Tamarind Paste:

Tamarind – 1 lemon-sized ball (soaked in warm water)

Sesame oil – 2 to 3 tbsp

Mustard seeds – 1 tsp

Chana dal (split Bengal gram) – 1 tbsp

Urad dal (split black gram) – 1 tbsp

Dried red chilies – 3-4

Curry leaves – few

Asafoetida (hing) – 1/4 tsp

Turmeric powder – 1/2 tsp

Jaggery (powdered) – 1 tsp (optional, for slight sweetness)

Salt – as needed

Roasted peanuts – 2 tbsp
Spices to dry roast and grind:

Coriander seeds – 1 tbsp

Black pepper – 1/2 tsp

Dry red chilies – 2-3

Fenugreek seeds (methi) – 1/2 tbsp
Rice:

Cooked and cooled white rice – 2 to 3 cups (preferably made with less water for separate grains)

Potatoes – 2 to 3 medium-sized (peeled and diced)

Oil – 2 to 3 tbsp

Mustard seeds – 1 tsp

Urad dal – 1 tsp (optional for crunch)

Curry leaves – few

Red chili powder – 1 tsp

Turmeric powder – 1/4 tsp

Coriander powder – 1/2 tsp

Salt – to taste
