Making My Grandma’s Rhubarb Custard Pie!
Join me in my home kitchen on this live and learn how to make my grandma’s vintage rhubarb custard pie recipe!
Crust: (9 inch pie)
2 cups flour
1/2 teaspoon salt
8 tablespoons butter cut into small pieces
8 tablespoons ice water
1. Mix together the flour & salt.
2. Work in the pieces of butter until the mixture looks like a coarse meal.
3. Add in the ice water to firm a workable dough.
4. Roll out thin to form a pie crust & flute the edges in the pan.
Rhubarb Custard Pie Recipe:
Filling:
1.25 cups sugar
1/4 cup flour
4 cups chopped rhubarb
2 eggs
Streusel:
1/4 cups sugar flour
1/4 cup oats
1/3 cup brown sugar
1 teaspoon cinnamon
4 tablespoons soft butter
1. Bake pie shell in a 450F oven for 5 minutes.
2. For filling, in a bowl combine the sugar & flour. Add in the rhubarb and stir to coat. Let this sit for 15 minutes.
3. Add in the eggs & stir well. Fill the pie shell with the filling.
4. To make streusel, mix all of the ingredients with your fingers until well mixed in a bowl. Then, top the pie with it.
5. Cover the pie with foil. Reduce the oven temperature to 375F, then bake 25 minutes covered. Remove the foil and bake 25 minutes more or until the filling is bubbling and nearly set. Cool, slice & enjoy!
