2 lbs russet or gold potatoes
4 large eggs
1/2 celery stick
2 Tbsp onion
1 scallion
1/4 of a small red bell pepper
2 Tbsp sweet relish
6 to 8 green olives
3/4 cup mayo
1 Tbsp yellow mustard
salt, pepper, and paprika to taste
