Ingredients
2 large tomatoes, diced
8 small cucumbers, chopped
3 cloves of garlic, minced
½ red onion, finely chopped
¼ cup fresh parsley, finely chopped
2 jalapeños, seeded and finely chopped
2 cans (4 oz each) mackerel fillets in virgin olive oil, undrained
Juice of half a lemon
1¼ teaspoons kosher salt
⅛ teaspoon black pepper
Instructions
1. In a large bowl, combine the diced tomatoes, chopped cucumbers, minced garlic, chopped red onion, fresh parsley, and jalapeños. Add the mackerel along with all the olive oil from both cans, gently breaking up the fish into bite-sized pieces. Add the lemon juice, kosher salt, and black pepper. Toss everything together gently until well combined.
Serving Suggestions: Enjoy immediately or chill for 30 minutes to allow flavors to meld. Serve with low-carb chips, as a side dish, or over fresh greens.*
