Egg Toast Cups With A Spinach Ricotta Filling | The Sweetest Journey

How to make an easy and quick breakfast with egg toast cups.

Ingredients:
4 Slices of Whole Wheat Bread
1/3 Cup Ricotta Cheese
1/2 Cup Chopped Spinach
4 Large Eggs
Black Pepper
Garlic Salt

Directions:
1. In a small bowl, combine the ricotta and spinach, stirring until well combined.
2. Cut off the crust from the slices of bread and gently flatten each slice with your hand or a rolling pin. Spray a muffin tin with cooking spray. Place each slice of bread into a cup. Spoon about a tablespoon of the ricotta mixture onto each slice. Crack an egg into each cup. Top with garlic salt and pepper to taste.
3. Bake in a preheated oven at 350F for 15 to 20 minutes or until the eggs have cooked to the desired doneness.
