Here’s a recipe for Egyptian-style stuffed grape leaves, often known as "warak enab." These flavorful bites are filled with a delicious mix of rice, herbs, and spices.
For the Filling:
1 cup rice (short or medium grain)
1 pound ground meat (beef or lamb, optional)
1 onion, finely chopped
2-3 cloves garlic, minced
1/4 cup fresh parsley, chopped
1/4 cup fresh dill, chopped
1 teaspoon allspice
Salt and pepper, to taste
2 tablespoons olive oil
1/4 cup tomato sauce (optional)
For the Grape Leaves:
1 jar (16 oz) grape leaves in brine (or fresh grape leaves, blanched)
Juice of 1 lemon
4 cups water or broth (for cooking)
Additional olive oil for drizzling
Instructions
Prepare the Filling:

Rinse the rice under cold water and drain.
In a skillet, heat 2 tablespoons of olive oil over medium heat. Sauté the chopped onion and garlic until softened.
In a large bowl, combine the cooked onion and garlic, rice, ground meat (if using), parsley, dill, allspice, salt, and pepper. Mix well.
Prepare the Grape Leaves:

If using jarred grape leaves, rinse them under cold water to remove excess brine. If using fresh leaves, blanch them in boiling water for 2-3 minutes, then cool in ice water.
Lay a grape leaf shiny side down on a flat surface. Place about 1 tablespoon of the filling near the stem end of the leaf.
Roll the Grape Leaves:

Fold the sides of the leaf over the filling, then roll from the stem end to the tip, making a tight cylinder. Repeat with remaining leaves and filling.
Cook the Stuffed Grape Leaves:

In a large pot, arrange a layer of grape leaves on the bottom to prevent sticking.
Place the stuffed grape leaves seam-side down in the pot, packing them tightly together.
Mix the lemon juice with water or broth and pour it over the grape leaves. Drizzle with olive oil and place a plate on top to keep them submerged.
Bring to a gentle simmer and cook for about 45-60 minutes, or until the rice is tender.
Serve:

Let the dolmas cool slightly before serving. They can be enjoyed warm or at room temperature. Drizzle with extra lemon juice if desired.
Tips
You can customize the filling by adding spices like cumin or pine nuts.
Serve with yogurt or a yogurt sauce for extra flavor.
