Q.: What is the effect of vinegar?
A.: The reasoning is you need an acid to break amylopectin into amylose (see video https://youtu.be/3A-lLOunRoE ) but in this video (see video https://youtu.be/XBjUPxaGcZQ ) I reproduced the recipe without vinegar and it still works, so I don't really know.

Q.: Where should I place to dry?
A.: You can leave to dry at open air inside your house, or put it in the sun if that's an option.
