Enjoy MOTHER'S DAY with a CHOCOLATE BERRY WEDDING CHEESECAKE from Trim Healthy Mama..delicious and you can still stay on your diet!

Chocolate Berry Wedding Cheesecake (S Meal THM)

Crust:
2 cups almond meal
2 tBSP extra virgin coconut oil
5 pinches mineral salt
1 – 2 TBSP supper Sweet Blend ground in a coffee grinder
Press into sprayed 8.5 inch Springform pan – Set aside

Cheesecake Filling:
3 pkgs cream cheese softened (1/3 fat)
3 large eggs
3.5 TBSP super sweet blend or ½ cup gentle sweet
Juice of 1 lemon
2 tsp vanilla extract
Beat all ingred in mixer until smooth. Pour into prepared crust and bake 35 min at 350 degrees. Mine actually took 50 min to cook through so check the middle with a toothpick or knife to make sure its done.

Let cool and then top with Strawberries and chocolate so chocolate sets. Serve when cooled and set. Enjoy!
