Wild Alaskan Berry Tarte Tatin

In this video Chef Austin Green uses wild Alaskan berries to make a classic French pastry dish Tarte Tatin. He first makes a sugar butter sauce in the skillet using 1/2 cups of sugar to 4 table spoons of butter. Then he adds salmon berries, cloud berries and thimble berries and places the puff pastry on top and moves it into a 375 degree oven for about 15 minutes. He pulled it out when it was perfectly golden brown and carefully flipped it on to a plate. Austin served it with wiped cream and garnished it with fireweed flowers.
