Slow Cooker Chicken Carbonara Pasta

Ingredients:
* 600g chicken breast, diced or left whole
* 1 cup bacon, diced
* 1 small onion, diced
* 1½ cups mushrooms, diced
* 1 zucchini, grated (optional)
* 2 cups chicken stock or bone broth
* 3 cloves of crushed garlic
* 300ml thickened cream
* 1–2 tsp paprika
* Salt and pepper, to taste
* 1 cup grated Parmesan cheese
* 250–300g dry pasta shells
* Extra stock, broth, or water as needed

Method:
1. If desired, sauté the onion and bacon in a frying pan until softened and lightly golden. This adds extra flavour, but you can skip this step if you want a true dump-and-go dinner.
2. Add the chicken, mushrooms, onion, bacon, chicken stock or bone broth, cream, paprika, garlic, salt, and pepper to the slow cooker. Stir to combine.
3. Cook on:
* Low: 5-7 hours
* High: 2–3 hours
4. About 1 hour before serving, stir through the dry pasta shells, grated Parmesan, grated zucchini (if using), and an extra splash of liquid if needed. The pasta will absorb quite a lot while cooking.
5. Continue cooking until the pasta is tender, stirring once or twice if possible.
6. Give everything a good stir before serving. Top with extra Parmesan and cracked pepper if desired.

Notes

* Add extra broth or cream if the pasta thickens too much.
* You can shred the chicken before serving for a creamier texture.
* Delicious served with garlic bread or a simple side salad.
