Over the centuries, Kolomna has been famous throughout Russia for its simple but delicious delicacy -- apple pastila (a kind of marshmallow). In the eighteenth century, pastila was a "sweet emblem" of the city and by the nineteenth it was already one of the most famous Russian sweets.
