Tofu scramble for breakfast or brunch #shorts #healthyeats

Tofu scramble is one of my favourite savoury dishes for breakfast. The secret ingredient is Kala Namak salt, also known as Himalayan black salt, which gives an eggy taste and smell.
💛 Ingredients:
1 cup (250 g) tofu
1 tsp Kala Namak salt
1 tbsp olive oil
1/2 tsp smoked paprika
1/2 tsp turmeric
1 tbsp nutritional yeast
1 tsp mustard (optional)
1/4 tsp black pepper
1 tbsp fresh red pepper (diced)
3 mushrooms (diced)
1 tbsp fresh chives (chopped)
1 tsp pine nuts (optional)
👩‍🍳 Method:
1. Heat the olive oil in a pan over medium heat.
2. Mash the block of tofu in the pan, with a potato masher or a fork. Cook, stirring frequently, for 3-4 minutes until the water from the tofu is mostly gone.
3. Then add Kala Namak salt, smoked paprika, turmeric, nutritional yeast, mustard (optional) and black pepper, while stirring frequently.
4. Cook and stir constantly for about five minutes.
5. Serve with roasted mushrooms (optional), diced red pepper and sprinkle with chopped chives and pine nuts (optional).
