After a long day at work, I craved some homemade Chinese comfort food—so I made crispy pan-fried lotus root sandwiches and classic Mu Shu Pork! Nothing beats the taste of home. 🍳✨

Then, I pampered myself with a new showerhead (hello, rose-infused water!) and tried IKOU, an amazing Australian organic skincare brand. 🌸🚿

To start the next day right, woke up at 6:30 AM for a peaceful breakfast picnic by the harbor near my home—the perfect way to relax before work. ⛵☀️

🐷Mu Shu Pork Recipe
Ingredients:
1 carrot, julienned 🥕
1 cucumber, thinly sliced 🥒
200g pork tenderloin, sliced 🥩
2 eggs, beaten 🥚
Handful of dried wood ear mushrooms (soaked & rinsed) 🍄
1 stalk green onion, chopped 🌱

Marinade (for pork):
1 tbsp oyster sauce
1 tbsp soy sauce
1 tbsp cooking wine
1 tsp salt
1 tsp chicken powder (or MSG)
1 tbsp cornstarch

Instructions:
1️⃣ Marinate the pork: Mix sliced pork with all marinade ingredients. Let it sit for 10 minutes.
2️⃣ Stir-fry pork: Heat oil in a wok/pan, cook pork until no longer pink. Remove & set aside.
3️⃣ Veggies time: In the same pan, stir-fry carrots and cucumbers until slightly soft.
4️⃣ Add eggs & mushrooms: Push veggies aside, pour beaten eggs into the pan. Scramble, then mix with veggies. Add soaked wood ear mushrooms.
5️⃣ Combine everything: Return pork to the pan. Stir-fry until all ingredients are tender and well-combined.
6️⃣ Garnish & serve: Sprinkle with chopped green onions. Enjoy with rice or pancakes! 🍚
