EASY Vegan Avocado Pasta Recipe

Serves 2

Ingredients:
1 Ripe avocado,
Half pack spaghetti,
A handfulof buckwheat,
Pinch of salt,
Pinch of pepper,
1 punnet of Plum tomatoes,
Chunk of Vegan Parmesan (Violife £4.99),
Splash of plant milk,
1/3rd carton vegan cream.

Instructions:

1. Slice the plum tomatoes through the midle and prepair the avocado.
2. For the sauce, spoon the avocado into the food processor (or blender) then adding the vegan Parmesan, salt, pepper, 1/3rd carton of vegan cream and a splash of plant milk. Blizt it together for about a minute until the Parmesan is well broken down and incorperated.
3. Pour a kettle of boiling water into the spaghetti, salting as needed, and boil on Hob for 10/ 15 minutes until limp.
4. Slightly brown the plum tomatoes on the hob with a frying pan for 3 minutes.
5. Drain spaghetti.
6. Add the avocado sauce you blitzed earlier to the pasta and bring back to the hob until the Parmesan is melted.
7. Add the Buckwheat and plum tomatoes to the pasta.
8. Serve and enjoy :)
