Almond Chocolate chip cookies - Easy but tricky !

Did you know that if you leave the dough in the fridge to chill overnight the different flavor and aroma compounds mingle together and develop more seasoned notes ? SO, let's get started !


FULL RECIPE :

1 stick plus 3 tbsp (5.5 oz./ 160g) Butter, softened
1 cup minus 3 tbsp (5.5 oz./160g) Light brown sugar
1 Whole egg at room temperature
1 Vanilla bean, split lengthwise and seeds scraped out
2 cups (9 oz./ 250g) Plain flour
¾ tsp (3g) Baking powder
1.5 oz. (40g) Dark chocolate chips
4.25 oz. (120g) White chocolate chips
3½ tbsp (1 oz./ 25g) Flaked almonds or sliced almonds
* Chill the dough for at least 40-45 minutes to get the right consistency
*Bake at 350°F (180°C /Gas mark 4) for 12-15 minutes

*DO NOT OVER BAKE THEM !
