October 2020 haul and the BEST Pumpkin Curry Meatballs

DIRTY CHAI
1 shot espresso
1 shot chai mix
1/2 cup Trader Joe's Fall Harvest Tea (iced)
Cold foam Maple Oat Milk
Combine and enjoy!

Pumpkin Curry Meatballs
-Dice 1/2 onion
-Combine with 1 lb minced turkey, 6 crushed garlic cloves (or less if you aren't a garlic lover) 1 tbls Umami Seasoning, 2 tbls curry powder, salt & pepper.
-Add 1/2 cup almond flour and one egg. Mix.
-Form into 1/2 inch meatballs and bake for 20 minutes at 350 F.
-Largely chop remaining onion, 1.5 cups carrots, 1.5 cups celery
-Saute for 5 minutes, then add Trader Joe's Spicy Pumpkin Curry simmer sauce
-When meatballs are finished, toss those in simmering sauce with veggies.
-Serve and enjoy (I know you will because it is literally so delicious).
