How To Churipo
Churipo originario de Michoacan
Ingredients
*3-4 Chamorro De Res
*3-4 pieces ofEspinazo De Res
*Zucchini
*2-3Carrots
*Chayote
*1-2Potatoes
*Cilantro
*1 large Tomato
*4-5 pieces ofCorn
*1/2 a Cabbage
*Onion
*Garlic
*3Chile California
*3Chile Anchos (pasilla)
*2 Chile Guajillo
Directions
1. Cook meat for one hour in water with 1 onion, 3 garlic cloves, cumin and salt to taste.
2. Remove stems and seed from chiles and Rehydrate them in hot water until soft.
3. Blend chiles with 1 garlic clove and enough water to cover chiles.
4. Add Chile sauce and a sliced tomato after the meat has cooked for 1 hour or until meat is soft.
5. After 15 minutes, add veggies.
6. Once veggies are soft, serve.
7. Add some lime juice.
Serves 5-7 people.
