Episode 81| Chicken Kalia| Kalia Poulet 🍗
Chicken Kalia is Another typical dish of Mauritius. The kalia gravy is based on briyani spices.
I learnt this delicious recipe from my grandma.
This is a highly requested video recipe from most of you guys, so i hope you enjoy it.
Homemade briyani spices:
1 Tbsp Cumin Powder
1 Tbsp Chilli Powder
1/2 Tsp cloves Powder
1 Tsp Cinnamon Powder
1 Tsp Tumeric powder
1/4 Tsp Cardamoms powder
1/2 Tsp Garam Masala (Optional)
1/2 Tsp Black pepper
1 Tbsp Garlic Powder
1 Tbsp Ginger Powder
Roast Cumin Seeds
Overall cooking time: 45 to 50 minutes
7 servings
Ingredients:
Chicken marination
1 1/2 onions
2 Tomatoes, blended
1 handful coriander leaves
1 handful mint leaves
1 whole chicken, cut into pieces
1/2 cup |125g yoghurt
1 tbsp ginger and garlic paste
2 tbsp briyani spices
1 tbsp cumin powder
1 handful coriander leaves, chopped
1 handful mint leaves, chopped
2 handful fried onions
2 chillies
2 large potatoes, cut into cubes and salted
1 Cinnamon stick
5 cardamoms
5 cloves
1 tbsp cumin seeds
A few saffron threads
1/3 cup| 75ml water(depending on how much gravy you want and how running or thick you want it to be.)
1 Tsp ghee
Hard boiled eggs (completely optional)
Peas
Coriander, mint and fried onion for garnish.
Marinate for the chicken atleast for a few ahours before cooking, for best flavour.
2 large potatoes, cut into cubes and salted and fry it until golden brown and crispy.
***FOR THE AMOUNTS OF OIL YOU ADD IS UP TO YOU. I KNOW IT IS QUITE RICH AND HEAVY FOOD.
BUT YOU CAN MAKE IT INTO HEALTHIER VERSION, IF YOU WANT TO SO THE CHOICE IS YOURS.
HOWEVER I LIKE MINE THIS WAY HOW MY LATE GRANDMOTHER USED TO MAKE AND I'M NOT GOING TO CHANGE IT.
This dish is best to serve with plain white rice, saffron rice, cumin rice or mauritian flat bread (roti)
